Buckwheat is actually not considered a grass at all, but is more similar to that of rhubarb and sorrel, with a very fragrant flower and produces a strong flavoured nectar and seed that is great for those who are sensitive to wheat or gluten intolerant. It blooms in cooler weather, which make it a great crop for bees to pollinate and collect while waiting for the rush of spring flowers. As more farmers are deciding against planting buckwheat, and use high nitrogen fertilizers for their cash crops, buckwheat honey becomes more and more of a specialty item.
