Liquid No.1 Golden Honey
Pure, golden honey is nature’s natural sweetener.
A worker bee will collect nectar from flowers and store it in their special “honey backpack” (it’s actually a honey stomach, but some people don’t like that visual picture), and transfer it to another bee when they return to the hive. This bee mixes digestive enzymes with the nectar to break down the complex sugars into simple sugars, which ultimately give honey its long, stable shelf life. This liquid, which almost 80% water, is then stored in the comb and is transformed into what we identify as honey through largely an evaporative process.
This quality of the honey is largely dependent on the types of crops and fertilizers used, and we are happy to say that we are extremely careful in the crops used for our honeys. Because of the variety provided to us in the Georgian Bay area, our honey has a unique and beautiful texture with a taste that is far superior to honey that is limited to one type of flower. The best honeys are always a mix of wild and cultured flowers, produced by hard working, high producing bees.
