Isn’t fresh baked bread one of the most amazing smells?  I remember walking into my mother-in-law’s house regularly and smelling this bread, just out of the oven.  Friends, it was delightful.  And so I’m sharing her recipe with you:

Georgian Bay Honey - Honey Whole Wheat Bread Recipe

Honey Whole Wheat Bread

Prep Time 2 hours 30 minutes
Cook Time 1 hour 5 minutes
Total Time 3 hours 35 minutes
Servings 3 loaves

Ingredients

  • 5-1/2 C Whole Wheat Flour
  • 1 T Yeast
  • 1-3/4 C Warm Water
  • 3/4 C Liquid Honey
  • 1/4 C Butter
  • 2 tsp Salt
  • 2 Eggs

Instructions

  • Combine 2 cups of flour and the yeast. Set aside.
  • Heat water, honey, butter and salt in a medium saucepan until lukewarm. Add to the flour and yeast mixture.
  • Add eggs, one at a time; beat on low for 30 seconds, scraping the bowl as you go. Beat on high for 3 minutes.
  • Add remaining flour as needed; knead for 6-8 minutes. Let rise until doubled. Punch down and divide into 4 and let rest. Shape into loaves and place in well-greased loaf pans. Let rise until doubled.
  • Bake at 475 degrees F for about 45 minutes. Cover loosely with foil for the last 20 minutes.

Notes

This will make 4 smaller loaves; if you prefer, you can divide the dough and form into three loaves for larger loaves -- baking time will be the same.  Enjoy everyone!

So here’s a guilty pleasure:  muffins.  I could eat muffins literally ANY time of day.  There may have been a point when a certain someone snuck out of bed to go eat one at 2:34am because they just smelled that good.  But as most of you know, muffins aren’t always the healthiest thing to eat — especially in the middle of the night.  So to help justify my insane obsession with muffins I tweaked my grandmother’s blueberry bran muffin recipe so it is healthier and more reasonably eaten in the middle of the night.

Let me just say that this recipe is by far the best bran muffin recipe I have ever tasted.  When I was little, my grandma would make these whenever we were planning to visit, and store them in the freezer until we came for a week at a time in the summer.   She still makes them to this day.  And you know, the funny thing about grandmas is that they can do EVERYTHING better than you can.  I can’t tell you how many times I called her for this recipe just to double check I had written it down correctly because it NEVER turned out the way she made them.  Hers were always *just* perfectly moist, not overwhelmingly oily but not tasting like you’re eating cardboard either.  Mine always ended up almost on the mushy side.  That was until I decided to start playing around with it.  See, there are quite a few ingredients in this recipe, so there is lots of room for variant consistencies in things like the yogurt, the oils used, etc.  But I finally found the perfect balance for the ingredients I use, and improved the health benefits of the muffins while doing it!  Win-win.   And the goodness of blueberries just adds to the muffin’s deliciousness and also adds a burst of bright flavour.

Georgian Bay Honey - Muffins Made With Honey Recipe

Blueberry Bran Muffins

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Servings 2 dozen

Ingredients

Bowl 1:

  • 2 C Plain or Vanilla Greek Yogurt
  • 2 tsp Baking Soda

Bowl 2:

  • 2 Eggs
  • 1 C Coconut Oil
  • 1/2 C Blueberry Honey
  • 2 C Natural Wheat Bran
  • 2 tsp Vanilla

Bowl 3:

  • 2 C Whole Wheat Flour
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 C Blueberries (fresh or frozen)

Instructions

  • Preheat oven to 350 degrees F.
  • Place yogurt in a large bowl. Mix in the baking soda and set aside. (This will react and get quite puffy)
  • In another large bowl beat the sugar, eggs and oil. Add bran and vanilla. Set aside.
  • Stir flour, baking powder and salt together; alternate adding the flour mixture and the activated yogurt mixture to the sugar and eggs mixture.
  • Gently stir in the blueberries.
  • Line muffin tins with papers and fill 2/3 full.
  • Bake at 350 degrees F for 30-35 minutes. (If your oven is like mine, check at 25 minutes and rotate the muffin tin to prevent over browning on one side!)

Enjoy guilt-free everyone!…even at 2:30 in the morning 😉

Ah summer.  Today is a day where you can feel that summer is actually coming and that it won’t be dreary April showers forever.  Today it is sunny, with a nice breeze, perfect for getting some yard work done!  And now that all that yard-work is finished (who are we kidding, is it ever done?) somewhat completed, it is time to cool down and refresh!  Cue drum-roll please…..Time for ice cream!  This is something of an experiment, but it turned out amazingly creamy, and holds its form nicely (not like all those store-bought ones that melt as you’re taking it out of the freezer!).  The taste is something you have to acquire, I believe, but if you’re not all that wild about goat cheese, it is easily omitted and you’ll be left with a beautifully decadent honey-ginger masterpiece.  If you do omit the goat cheese, you still need to strain it through a fine-mesh sieve, but you won’t need to filter it through cheesecloth.  (You’re more than welcome to, but it’s just an added step!).   I personally think this pairs well with our ginger honey if you REALLY want to bring out that ginger flavour, however I would consider not steeping the ginger as long, or using less of it.  Either way, enjoy this over a bed of any fruit crumble, drizzled with honey over top for a “caramelized honey” effect, or straight out of your ice cream container by the spoonful.  No judgments here.

Georgian Bay Honey - Ginger Honey and Goat Cheese Ice Cream

Honey Ginger & Goat Cheese Ice Cream

Servings 1 pint

Ingredients

  • 1 C Whole Milk
  • ¼ tsp Salt
  • ¾ C Liquid Honey
  • 5 Egg Yolks
  • 1 tsp Vanilla
  • C Shaved Ginger
  • 2 C Heavy Cream
  • 2 oz Mild Goat Cheese

Instructions

  • Mix together thoroughly honey, egg yolks and salt in a small bowl. (about 5 minutes) Set aside.
  • Place milk, ginger and goat cheese in a small saucepan. Gently bring to a simmer; do not scorch. All you want to do here is melt the goat cheese so that there are no big clumps.
  • Slowly add milk and ginger to eggs and honey, stirring constantly. Transfer back into saucepan and cook, stirring constantly until it even coats the back of a wooden spoon. DO NOT BOIL.
  • Filter through a fine-mesh strainer, then filter again through cheesecloth. This step is important because it will filter out the graininess of the goat cheese, but still leave you with that awesome flavour.
  • Chill overnight. Churn in an ice cream maker per manufacturer’s instructions. Let freeze overnight and serve over warm apple crisp or blueberry buckle.

Notes

This makes a medium flavoured ice cream. If you wish for a stronger flavour of goat cheese, add an additional 1-1.5oz of goat cheese to the milk before simmering.

Is it just me, or does this year seem to be a terrible winter for colds??  It seems like our family just gets over one cold only for someone else to come down with another.  Am I right?  Well, in a battle against the never-ending-cold-cycle, I’ve come up with a pretty amazing concoction of goodness and stuff-that-tastes-disgusting-but-is-good-for-you.  The best part is using our Cinnamon Cream Honey…since cinnamon has so many great immune boosting qualities to it, it’s just a no-brainer!  Be aware that this in no way is meant to diagnose any medical conditions and that the following recipe should be taken in moderation.  Ok!  Let’s kick these colds and get on with spring!!

Georgian Bay Honey - Treating Cough With Natural Honey

Hot Lemon & Honey

Prep Time 10 minutes
Servings 1 Serving

Ingredients

  • 2 T  Cinnamon Cream Honey
  • 2 T  Lemon Juice (freshly squeezed is best!)
  • 1 T  Apple Cider Vinegar
  • 2 T Fresh Ginger, sliced (if you don't have fresh, you can use 1/2 tsp of ground ginger instead)
  • 2 C  Boiled Water   (approximately)

Instructions

  • Mix all together and wait till cool enough to drink. Discard ginger if desired, or let steep. Enjoy!

Notes

Georgian Bay Honey - BBQ Honey Garlic Shrimp

Honey Garlic Shrimp

Prep Time 25 minutes
Cook Time 10 minutes
Total Time 35 minutes
Servings 4 people

Ingredients

  • 1 18 oz Package of Frozen Shrimp peeled, deveined
  • 1/2 C Honey
  • 1/4 C Soy Sauce reduced sodium
  • 2-3 cloves Garlic crushed

Instructions

  • The first thing you will need to do is thaw the shrimp (unless you’re not as scatterbrained as I am and can manage to get them out of the freezer beforehand). Place them in a colander under running cold water until mostly thawed.
  • Whisk honey, soy sauce and garlic together in a bowl, and place in a seal-able bag. Pour shrimp in and leave to marinade 15 minutes (or all day for more flavour).
  • Grill in a BBQ grill basket with your favourite veggies for a quick, easy-clean up savoury recipe.

Notes

Note: If marinating all day, place marinade in the refrigerator.

Greek Salad Dressing

Prep Time 5 minutes

Ingredients

  • 1 T Organic Apple Cider Vinegar
  • 3 T Olive Oil
  • 1 tsp Mustard
  • 1 tsp Liquid Honey
  • Greek seasoning , to taste
  • Salt and Pepper , to taste

Instructions

  • Whisk all ingredients together in a small bowl, or mix in a cruet for easy use and storage. 

Notes

I find a mason jar works just as well as a cruet, and is simple to store in the fridge.  This recipe is easily doubled, but should be kept in the fridge after initial use.
